Soft shell for fish tacos, hard shell for everything else for textural contrast.

And I don't really like burritos because of the lack of fibre...

We talking specifically tacos or, as the title says, are you more asking about the flour/corn tortilla in general? I usually prefer the soft tortillas as you'll find me stuffing my food hole with burritos and their ilk. If we're only talking tacos as folded in half and stuffed with meat/toppings, then I'll have to go with the traditional hard shell.

soft.

with soft i can use them as they are, fry them for a nice lil puffy shell, grill them, ect.

with hard, you're limited to just that, or breaking it into pieces for a taco salad

Soft, I hate when my taco breaks before I get a chance to stuff it in my gullet.

also with a hard shell, you can't adequately get everything in one bite. it's either mostly meat, or mostly everything else.

I've never had a taco. I love crisps though and hard taco shells from what I can gather are basically that so they get my vote.
