Resident Evil 3 (best gameplay of the trilogy)
Tekken 3 (just for the fantastic OST I don't even like Tekken)
MGS VR Missions (you get all the great gameplay without having to deal with the cinematics)
and for the unconventional pick, Tenchu 2 (terrible fov but I like it)
Avoid the pure 2D games/arcade ports. The Saturn was better at it.
