Sure, and chalice dungeons too. But it should be stressed that these things are entirely optional (and entirely awesome, imo). It's good padding for hardcore fans.

A YouTuber that does challenge runs said in a Dark Souls video (I think it was NG+7 as a new character) that for hardcore fans, artificial difficulty is all you can do to make the game harder, and thats not a bad thing. People treat it as though its a swear word but for really good hardcore players, artificially limiting what you can do or inflating enemy stats is all you can realistically do to make it harder. It can and often does change entirely how you play.

Some of the games do change or add things (such as enemy placement) in NG runs but its fairly rare and light in the changes.

Only DS2. DS3 has upgraded rings and Bloodborne has more high level upgrade materials but thats it.
