My wife and I found ourselves in a very similar situation.

We were dating at the time, I was away in college and she was back home, her lease ended and her parents were unfortunately in the process of losing their house. She moved into my parents house, and lived in my room for probably a year while I finished up school, and then we lived together there for another year before we moved out. No, it wasn't ideal, but we saved a ton of money and moved out on our own with no worries.

Your girlfriend is being weird. If she gets along with your family, there's no reason not to do it for a time. Just have a goal on how much you want to save to get out of there, and meet it. There's an end in sight. Tell her to settle down.
