Depends what you consider "super important"!
Amber is used in like Hylian gear, Amiibo gear, and some plain defense earring. Rubys and Sapphires are in pretty much any Heat/Cool resist gear upgrades, and Opal ins some swimming boost armor / accessories, and Diamonds for some Guardian resistance crown.
Earrings / Accessories are sold in Gerudo... provided you have the gems required.

Go to Lake Hylia at night... on top of the bridge is a good spot to scout over. IIRC you need its horn...
