Ive tried strip, ribeye, and filet

strip might be the easiest, but I usually will cut my steak in half to make sure its done, and then I lose track of the fat.

Ribeye is a little too marbled for my liking

I've accidentally cooked steak to medium well and it tasted fine. It was still pretty tender and juicy and it was gray throughout. It was a 1 inch steak and it was a boneless, very marbled short rib.

A filet has almost no fat if that's what you're looking for. But that also means it's not going to taste as good and you're gonna get less bang for your buck. I'd recommend a NY strip. It has a fat cap but it's pretty easy to cut off all at once.

Ribeyes usually have a pretty thick piece of fat running between the cap and the eye that won't completely render down, especially if it's a cheaper piece of beef
