It's a customer service job so there's a lot to do, but not too much staff to take care of everything at a steady pace. They do more than just pour drinks. They have to remember how to make dozens of cocktails. They have to learn how to multitask while retaining the memory of multiple orders long enough to make those orders. They have to clean and restock.

And deal with tabs/taking and giving money while doing all that.

I mean I'd argue that engaging and conversing with your patrons is far more important to bartending and point out that mixing cocktails is a fairly exact science that requires far better memory and skill than tossing a burger together. You're not wrong but the level of engagement and talent is pretty different.
