Subnautica I'd disagree with as well, while you can explore completely freely, there's also no separation between that and the "main quest", the game is all about exploring the world and piecing it together in whatever order you choose.
Minecraft, fair enough for you then it still fits the criteria laid out, to have story wasn't a requirement. Terraria I only played the beta where bosses where optional.
Subnautica though, the main quest really only starts at a certain point I wouldn't count finding the main quest to be part of that quest. Sure Subnautica is about exploring the world and learning the lore but by that same measure you would need to say the same about Skyrim.
