Exchanging money for money is just equal value, each dollar is as good as another. Now if I gave you a dollar and you gave me a photo that you told me is worth a dollar then actual exchange took place. You have a dollar and I have something that is purported to be worth that dollar but isn't a dollar. An NFT is a digital version of this. Exchanging crypto for something that was created using the blockchain but isn't cryptocurrency. The validity is up in the air (there are a shitton of ways to scam people using NFTs) but that's what's going on.
