Both my mom and sister have celiac and a blood test looked like it confirmed that I did too, however I haven't really ever experienced any symptoms. I've been eating a gluten free diet for a year and my new GI has said he thinks my blood test wasn't conclusive enough, so he scheduled an endoscopy for me in early May. In order for the procedure to show whether or not I truly have celiac I have to eat gluten for two weeks prior to the endoscopy. It will either confirm that I have to go back to eating gluten free for the rest of my life, or I'll just be able to eat whatever the fuck I want again. Question is: If you knew there was a possibility you couldn't eat gluten again, what would you want to eat during that two week period as a few last hurrahs? |
