The "sauce" is pretty much just brown sugar, vinegar, and the juices/sugars that come out of the onions as they caramelize (the water that gets added has mostly boiled off by the time you finish, it's just there to help dissolve the sugar and cook everything more evenly). It's some of the components that typically go into barbecue sauces, but quite a bit simpler so the onion and bacon flavours can shine through. Other recipes will tweak the proportions of sugar to vinegar, but that's the basic gist of it. Actually reading the recipe, makes me realize the name is even more misleading...
