It just depends on who I'm interviewing with. I can be extremely personable and often outclass the interviewer in terms of charisma but that only goes so far.

Having a background in IT, software and computer hardware I have interviewed in many different environments.

I tend to avoid start-ups because despite being more relaxed and confident as a company and likely to hire you, it's usually a facade and IT/ tech employees are always the first to go.

Usually if the job is well-paying the interviewer often has a stick up their ass. I went to one interview with a smaller company where the person conducting interview actually offered me a dab in the middle of the interview, of course the job paid shit.
