I was kinda letdown by Memphis Massacre 2. The first 3 tracks had my hyped for late 90's crunk (BHZ is a heater) but then the rest of the CD just turned into dime-a-dozen, present day trap.
I mean trap is the logical evolution of Memphis rap. Without Mystic Stylez and Tommy Wright trap most likely wouldn't exist.

Natural wines are taking off to a degree but only really among wine nerds. Punters like the same wine each year, unfortunately it means we have to play God.

I'd love to get into brewing more one day.
I've had some really good ones but my palate for wine is awful. I really only dig acidic whites and champagne/cava. I'd love to get more into naturals since they're made more like lambic/geuze, my favorite style of beer (hence my username).

Oh yeah I remember that one. Was great! I had their Biere du Blanc which was similar, and loved it. Used to live up in Austin so would go out to Jester King regularly. Maybe Ill take a road trip out there this upcoming week for something to do lol.
Nice. I'm trying to find a plug for their stuff. Closest place I can legally get it is a 2 hour drive across state lines and very select bottles.

I work as a winemaker and brett is an utter bastard in new world winemaking but it seems to really bloody thrive with craft beer, the added complexity is really cool.
Yeah you guys hate literally everything that isn't old world tradition. Josko Gravner is doing orange wines made like lambic which is actually pretty fucking cool though

Open air seems tricky because you have to have the right environment to let stuff grow. I havent had their SPON sadly, but I have one of their Nocturanal Chrysallis beers in my fridge now from like 2-3 years ago. Its a blackberry sour. One of my favorites from them. Need to crack that bad boy open soon
Yeah, I've had a few of their second use grape beers as well (the seeds and stems, the name of the beer escape me. I remember it had Sangiovese grapes at the least). They're killing it, would love to collab with them one day. One of my favorite breweries just did and I'm trying to pull some strings to get some sent my way.

I see some brewers are introducing brettanomyces into their beer to add character, what are your thoughts on this?
I love brett. Slow fermenting, funky yeast that adds so much depth and character when used properly. I had a pilsner last year that was barrel rested with 13 different strains of brett before being bottle conditioned with white yeast. Its probably the best American beer I've ever had.

Ohhh you guys do naturally fermenting stuff?

I live in Texas and Jester King is leading the way right now with bottle conditioned and naturally open air fermentation. Their sours and beers are incredible. Have you had their stuff?
No open/spontaneous ferm yet. Trying to convince the beancounters to let us get a coolship.

Yup, I love Jester King. I have a few bottles of SPON and Le Petit Prince in my cellar.

Sounds wonderful. I always wanted to try harvesting yeast that way but never got around to it. I only ever used the Belle Saison dry yeast but I made some of my best beers and ciders with it.

You're living my dream from a past life tbh.
I've only been doing farm beer for a little over a year now. Prior to this I was at brewery in Virginia that got a silver medal at GABF while I was there for our stout back in 2017. I actually have a picture of me somewhere hanging out with the dudes from STONE Richmond when we did a Belgian IPA collaboration with them
