...I think the only Zelda 1 characters aside from the main 3 are the old people in caves.

Honestly, as far as iconography is concerned, I'd think The Moon is a pretty good contender. Certainly far more distinguishable than Epona (a generic horse) and Impa (who has vastly different designs, none of which is really "iconic"). None of these characters are really in the public conscience outside of gaming circles, so you have to start thinking of what's most visually striking.
