I've never understood how anybody actually gives a single fuck about Sonic in 2017.

Because Sonic is still great, that's why.
As much as my heart loves the edginess of Shadow the Hedgehog and the whole era of having edgy, dark, brooding characters to complement the optimistic hero's mindset (though Sonic is more of a nihilist than an optimist), I gotta give the vote to & Knuckles.

Knuckles is a better antagonist and side character, but in terms of being a proper main character I gotta give it to Shadow or Blaze. Knuckles' story was hella tacked on.

Technically it would be Shadow, since he has a game named after him exclusively. But Shadow sucks, so the answer is Knuckles & Knuckles.

It feels like this franchise is the Chris Brown to its fans' Rihanna. They suckered you guys in with a great start, but they've been coming home drunk for years now and beating you whenever you ask for a good game. Yet you keep thinking that maybe tomorrow he'll be nice, maybe tomorrow he'll stop hitting you if you treat him well, maybe the next game will be good. But it won't. He'll just come back with another half-empty fifth of Jack and a mean look on his face.
And before you say Generations was good; no, it wasn't. Half of Generations was good, specifically the half that was a photo album of the happier days, the honeymoon phase of your fandom. Then you had to wake up to the alcohol on his breath of homing attacks and broken physics.
