It's because with the blue glint attacks they made it so that you don't parry when you see the glint, you have to parry right before the attack hits you. It just adds a stupid layer of difficulty because there's no consistency on timing with the attacks and some of the enemies honestly move waaaaaaay too fast.
I'm pretty sure most other combat games like this the glint is the visual clue to parry.
