I think that's canonically why he goes by Eggman. (well maybe not in the movie universe though)

IIRC It's an insult nickname Sonic made up that he just leaned into and assumed as his actual identity or something like that.

It's more the difference between translations. Japan calls him Eggman, and the games went with it eventually
