Do you really think having to include an open source emulator and a copy of the old version is going to kill sales? It might even drive sales more, as people who aren't interested in a remaster may be interested in a (legit) way to play the old version on newer systems.

The monkey island 1 and 2 special editions allow you to switch back and forth from og and remake version with a single key press. This was so neat to me

My biggest problem with remasters/remakes is when they are missing content/features present in previous rereleases. Every rerelease should be a new "definitive" version
