Black Flag, but only because it's the least Assassins Creedy of all the games.

So I guess AC2 or Brotherhood comes second.

I enjoyed Black Flag's settings/quests the most, though sailing around does get tiresome after awhile, I suppose.
Take me down from the ridge where the summer ends
And watch the city spread out just like a jet's flame
