Outside of City Escape there was no real memorable SA2 stages though I liked the final boss.
Maybe it's because of the rap but I feel like I remember every single Knuckles stage - pumpkin hill obviously, aquatic mine, wild canyon, the space one... those are the ones off the top of my head.
radical highway was sick. white/green jungles were solid. sky rail was sick too actually
not much to remember about the mech stages though will give you that, but as i reflect on this, most of the non-mech stages were legit
