I no longer eat dairy but when I did Id use real cheese or if I was going to use melty fake cheese Id use velveeta. I cant do the kraft singles. That stuff doesnt melt good enough for me. Also mayo makes the best grilled cheese and there is science behind it with the smoking point and yada yada but basically if you butter only the inside of your bread and spread a thin schmear of mayo on the exterior of the sandwich, you create the ideal conditions for the bread to toast, cheese to melt and butter to shine. The mayonnaise doesnt actually provide flavor if youre a mayo hater, you wont even taste it, I promise but instead encourages ideal browning and melting. Also this is cheating but Im evolved past just grilled cheese and have to put some ham in there. So good. Butter on both sides AND in the pan, for cheese Kraft singles is alright (TC) I prefer Velveeta or if you want to get fancy Cooper Sharp. The bread I use is Italian since it makes for a wide looking sandwich...the ratio I leave a bit of room open so it can melt properly without sticking to the pan much. --- Wrestling fan :) ... I don't use Kraft, though it certainly does melt better. I prefer to mix and match my cheeses, like use cheddar or swiss for it. I typically melt butter in a pan, slap the sandwich on it to soak up a chunk of the butter, then flip it over and get the other side with more butter. Cook till golden brown and then done. If I do swiss I might add some honey ham or black forest ham. Cheddar I typically have with tomato soup. Amount of cheese varies, usually at least 2 - 4 slices. Yeah butter the outside of the bread, put the cheese in between the two slices and then cool until the bread is golden brown and the cheese is melted.
