restaurants like KFC and Church's used to be seen as good, but now they aren't as popular. Raising Canes starting to take over, but not that much.

Too much competition probably. I know for my area, there are at least 8 franchises that specialize in chicken. Plus all of the Mom and Pop shops that specialize in it too.

Also, Church's was seen as good? Everyone I know agrees that their chicken is terrible, but the biscuits are amazing.

KFC gave up on their North American market. They've placed their entire focus on the international market, which is where they make most of their revenue. I've seen three videos including "Company Man" address this.

I like Popeye's but I wish you could buy the fried chicken in bulk and not just as 2-3 piece meals and chicken sandwiches.

Chic Fil A and Raisin Canes stayed around because of menu simplicity. It allows them to be accurate and quick. They are also less pushy because they dont have 3,000 menu items with half of the ingredients going stale. Canes cornered the market in Baton Rouge, where they started, by marketing themselves as catering boxes for tailgating (football). They somehow made those people think they were supporting the team by eating canes. It was a symbol of popularity something to be seen with, like a Starbucks cup.

I couldnt even tell you how much stuff we threw in the trash when I worked in fast food. Our store had a big menu and kept adding new stuff all the time. If something wasnt an instant hit, the stuff usually went in the trash because we needed space in the freezer or on the line. Thats money that corporate was hemorrhaging to try to create a new buzz item. If we had stuck to burgers, fries, nuggets, and drinks then there would have been more corporate profit to pay the workers.

Out here we have those, plus Louisiana Fried Chicken, Golden Bird and Pollo Campero. Plus dozens of smaller places like Howlin' Ray's, Honey Kettle, Bomb Chicken, Running Chicks, etc. There's chicken everywhere in LA lol.

Standards are changing and America is somewhat getting food culture. Unless it's a burger joint most chains are somewhat struggling to really keep up with their growth and with non-American chains coming to America things like fried chicken are a hotbed for competition from places that haven't gotten complacent. Places like McDonalds have always had competition from one-offs, but places like KFC have always failed to really have any competition beyond more expensive locations/other major chains, all of which have a different enough style that the competition hasn't been that fierce (this is sort of why Taco Bell has stuck around as it really doesn't have any real direct competition due to just how different it is).

Recent documentary shows that KFC is entirely franchise based in the US nowadays. Theres little corporate support, but lots of fees to pay. Quality chart shows a sharp and steady quality decline since all this really took off.

sometimes I think it's better to go to a supermarket deli early in the morning to get some cheap fried chicken than it is to go for KFC/Popeyes/Church's and spend $30+ for 16 pieces of dried up greasy chicken that's mostly batter.

KFC used to be good until they weren't. I can't tell you the last time I willingly ate at a KFC. I prefer Popeye's, Mary Brown's, or the chicken from 7-Eleven.

This is also why the quality of Popeye's chicken sandwiches can vary from store to store. You are more likely to get a bomb-ass sandwich if you get it from a company managed store as opposed to a franchisee.
