MSG got a bad name because in the 90s fast food restaurants became scared of how much people were liking chinese food so they unleashed a wave of bullshit propaganda that, for some reason, is still largely believed to this day

But MSG is the king of flavor!

If you eat anything off the shelf in an american store chances are it has msg the fact that the racist trope still makes it sound bad is dumb

Nothing against MSG, but if its so good for stuff like fried chicken, do some people use it for everything they cook?

I use a lot of stuff with MSG in it like Japanese mayo and other sauces and marinades, but dont actually have MSG i use to sprinkle on stuff myself.

So many of these posts in this topic. Its literally go nothing to do with racism. It has to do with health. For example my mother dislikes it because her knuckles swell up.

I myself had an sodium attack where I felt like a I was hung over after eating a bowl of Maruchan ramen (with added hot sauce and soy).

I live in NC where supposedly racism is rampant (its not) but despite this I have never heard anyone try to tie their dislike of MSG to Asian people.

It's actually lower in sodium than standard salt so it might be better for you.

But here is the thing, most places that use it dont replace the salt they use it in addition to that. When I am making a recipe with msg, I almost always lower the amount of salt to compensate.

A lot of Walmarts should carry it, it WILL NOT say MSG but looks like the brand on the left, the one on the right is the one you can find at Asian supermarkets.

Salt isn't a substitute for msg. They're two totally different things.

The thing about msg when you're not quite familiar with it is that you don't really notice it's presence but you sure do notice it's absence. It's the compound responsible for making food taste meaty/savory.

MSG is a natural ingredient in things like broccoli, tomatoes, peas, potatoes, corn, and basically anything from the ocean.

You have had it 100%, with a very high chance of eaten things with it ~99% of your meals. Much like with salt you mostly don't notice it being there (unless there is too much) but you notice it when it is absent.

I cook with MSG all the time. Works well with so many dishes to give them that extra little oomph.

I went to the Popeye's in London recently. Easily the best fried chicken I've ever had (though we're not exactly spoilt for choice here in Germany)

I think I was like 24 before learning MSG is just a condiment. With it only being called by its chemical name and the outrage over it, I always just assumed it was some kind of preservative or something.

Its basically just a better tasting salt. The "studies" done on it way back when were flawed, didn't follow any of the rules of actual studies, influenced the participants on what they should be feeling from it, and was just overall a very xenophobic act.

Its no more worse for you than salt; don't go overboard, and its fine.

The glutamic acid is the important part. Sodium is a single atom, and not an important one.
It just makes it easier to dissociate in water and let our tongues taste glutamate.

I did get Grains of Paradise though. I'm a slut for pricey, exotic foods and teas.

Nutritional yeast is great. It has a very rich and slightly cheesy taste. Very popular in the vegan community.

Nutritional yeast is what they use to add cheesiness to food items without using dairy. I use it in my bootleg cheez it recipe, and also as a substitute for cheddar when Im making wraps but dont want to add the calories from cheese. Im not vegan or anything, I mostly avoid cheese since its high calorie and low protein, but some nutritional yeast in Greek yogurt, with other seasonings like paprika and a dash of garlic and onion powder is a delicious way to add some cheesy flavor and 16g protein per 100 calories.
