...it's eventually revealed that the main antagonist was the last person that got sucked into this world and is just trying to get home? And that the iseaki itself is a monstrous thing that periodically kidnaps people to become the "chosen one?"

Often it isn't the world itself that is pulling in people, but greedy nations hoping to use and abuse 'summoned heroes' for their own benefit. Other times though it is a god that is toying with someone. In another somewhat common trope the gods are basically system administrators and the world itself is treated as a sort of video game, which can sometimes invite splitting summons into teams between the common races: humans, elves/dwarves, beast kin, and demons.

I do remember one exactly like this, but don't remember the name.

The Warrior Returns is the opposite where an earlier chosen one returns to Earth and just gets shit on by the locals, so he goes crazy and decides to kill everyone. It's up to the new chosen ones to get isekai'd, get powers, and try to stop him. The plot is really interesting on a conceptual level, but the writing ends up really boring.

Why do all of these shows have titles that are longer than the opening song?

Because there's a tradition to summarize a show's entire premise in the title to catch people's attention on the self-publishing website where many of these stories first spawn.
