Martha Stewart one lol but I subbed out the evaporated milk for half-and-half. Might go straight heavy cream next time Came out a little grainy. Not as smooth as I would've liked. I don't have a candy thermometer. Tried doing the ball test but wasn't getting the result I wanted, and started getting nervous I was overcooking it at 25+ minutes, so I took it off the heat and finished up. Tastes good, though No test batch. This is the batch for Christmas this year. My kids will eat anything with sugar so it really doesn't matter I suppose. The ball test gets a little weird when you've got fat and other stuff mixed in with the sugar, as was the case there (especially with half-and-half, which has a higher fat content than evaporated milk), but if it turned out grainy, that's probably because you stirred it too soon after boiling, rather than any issues with your temperature. Assuming I'm looking at the recipe you used (https://www.marthastewart.com/345367/penuche-fudge), it seems to direct you to put it in the mixer while it's still hot, which isn't ideal. The act of pouring it is going to cause some crystallization to happen before the stirring starts, and at that temperature, it's more likely to form the larger sugar crystals that give it that grainy texture. Ideally, you want it to cool to around 110-120F before you start stirring. Candy thermometers are generally pretty cheap (sub-$20), so if you're interested in doing more stuff like this, it'd probably be a worthwhile investment. --- This is my signature. It's not like sandy- grainy or gritty or anything. Just not as smooth as I'd hoped for. Certainly not a baking disaster, just not up to the standard I was shooting for I'm not opposed to a candy thermometer I just haven't gotten around to picking one up.
