That's what it recommends. Will I be okay on normal or should I actually play on easy because I'm a noob to the genre?

Just play on normal, the game isn't that hard until you get to the expansion.

I'm not sure what he means, but maybe just that most people who would be interested in Pillars of Eternity would have already played at least one of the D&D based games.

A few things that pop to mind.

Pause often and make liberal use of slo-mo in combat. You won't be able to keep up otherwise.

Learn the mechanics of the game. There are some decent guides right in the game.

There is a companion of every class, but the Rogue, Barbarian and Monk aren't available until the dlc I think.
