I can't remember where I read/saw it, but I remember someone making the argument that movies being so self-referential is what killed off the parody movie genre. Like it's hard to make a parody of an MCU movie when the movies themselves sometime point out how ridiculous they are.

Well, care to list some other examples of past horror parodies?

Going strictly off the Wikipedia page for Horror Parodies, the most recent one Ive watched is The Dead Dont Die. It wasnt a good movie but it was watchable for me because I like zombies and all the actors involved (who doesnt?).

An older one but still 21st century is Behind the Mask: The Rise of Leslie Vernon. I thought that one was quite good and it is critically acclaimed. Tucker & Dale Vs. Evil (2012) is probably my favorite horror parody. A sort of rip off of it (not a literal rip off of the plot just very similar themes) came out a year later, even starring one of the same leads, called Cottage Country.
