I like it.
It's literally just cauliflower, diced into tiny pieces.
It has little taste on its own, but does a great job of soaking up whatever sauce it's in and tasting like that.
It's got a slightly crisp (while still soft, overall) texture to it that rice doesn't have, and which I actually kind of prefer.

I haven't had it on its own but I've had it in a dish, like stir fry. It's okay. Tastes like cauliflower.

Yup, it's fine. I don't think it's really like rice, but I don't hate it and it makes my wife feel better than if we ate rice.

I don't like it. I prefer shirataki rice over cauliflower rice. Has a better rice-y texture and doesn't taste like cauliflower.

But really, I'd rather just make room for rice.

It tastes like cauliflower, not rice, but it has roughly the same texture as rice. That, coupled with the fact that cauliflower is a fairly mild flavour and therefore is easily taken over by whatever sauce you mix it with means you can pretty effectively use it as low-carb substitute for rice you'd be using as a base for something, like a stir fry or curry. If you're going for something more like a rice pilaf, the cauliflower's going to come through more strongly, making it a less effective substitute (though still perfectly tasty in its own right).

made from konjac, very low calorie/carb. They sell it in noodle form too. I don't really care for the noodles...it has an odd texture, but in rice form that isn't as prevalent imo.

ill try out different things though. Ill grab some cauliflower rice from the shops today and see how it goes, then I may experiment with shirataki rice if I can find it

Yeah probably thinking of shiitake mushrooms.

Make sure you rinse shirataki well. Should say that on the packaging.

I've seen Aldi sell it, but (like a lot of stuff there) only seldomly.

My only actual experience w/ cauliflower rice is frozen dinners. Bird's Eye makes a beef & broccoli steamer bowl w/ it. And it was pretty good.

I would be interested in making my own, since "making" it seems simple enough. What I wasn't clear on was how to store it, long term.
I think you have to blanche cauliflower to freeze it or something...
