Because most standard.controllers are crap for fighting games.

Id always played with a controller. When SF4 came out, Honda became my main, but using Hundred Hand Slaps during combos was really tough for me to pull off. Got a fightstick and it became really easy.

Because old controllers were fucking terrible for fighters, and only really got noticeably better in the PS3/360 era. Outside of the Sega Saturn controller that is.
Also, playing grapplers/360 input characters on old D-Pads was fucking terrible. I remember getting blisters after long play sessions. ... Copied to Clipboard!

fightsticks are cool and there are way more options for customizing a fightstick compared to a console controller

Certain advanced moves are just way easier on a fightstick, and if you get a square gate it can make charge characters WAY easier to play.
For example, a popular Cammy move in SFIV was her Cannon Strike, but there's an advanced form called the "tiger knee cannon strike" or "TKCS" for short. It involved buffering the cannon strike inputs into a jump and then executing the move the instant you are off the ground. If done correctly, she lands right where she is with the move. If you spam the light version of it, it's a great way to build meter if your opponent is turtling since you can rapid fire pull it off. Normally to Cannon strike you have to do 214+k (or quarter circle back + kick) while jumping forward in the air. So instead you do 2149+k which buffers the attack into a forward jump to make it work. It's possible to do on a controller, but if you have a square gate fightstick getting that 9 off instead of accidentally jumping back or straight up is way, way easier. --- "History Is Much Like An Endless Waltz. I'd say its a combination of "it's what I grew up with" for older players, & that most modern fighters either started there or follow the template of games that did. It's probably why the FGC hates SSB (& most games like it) so much; it's basically a game that throws out the standards the FGC has polished.

For the most part, your choice of controller comes down to preference. I find doing motions on the arcade stick is easier than on a regular gamepad so that's what I go with.
There is one advantage I can think of though for the arcade stick. It allows you to mash faster which mattered in some games like MvC2 to crank out more damage during supers and to escape Magneto combos.
