I mean I don't think my omelettes are that pretty because I don't flip perfectly but I don't understand the concern about making it scrambled eggs...

heat control I would agree is the main thing. I really need to get an omelette dedicated pan, wreck the fuck out of it when making omelettes (worth it though).

It has gotten substantially easier to make omelettes since I got an actual non-stick pan (albeit a $5 Ikea one, though it's honestly way better than I was expecting for that price). Stainless steel isn't exactly ideal for eggs. The pan's still too small to actually cook a 4-egg omelette all the way through, but it does mean I can get a spatula under a smaller one without immediately rending it asunder.

It's not the end of the world, since scrambled eggs are still tasty, but it is disappointing, especially where cooking an omelette generally takes more careful effort than cooking scrambled eggs.
