Gross salty bullshit.) Mayo gets a light application on one piece of bread before wet ingredients like tomato are put down. This oil-based mayo barrier prevents the water from seeping into the bread and making a soggy sandwich. If you are tasting mayo, you are doing something wrong and applying too much. No one wants a soggy/wet sandwich. Butter can perform this same function, while adding perhaps a bit more richness to the finished product. You scrape some on the outside of the sandwich and throw it on the grill. Then enjoy! To upgrade that, skip buttering the bread and dip it into french toast batter instead.
