Yugioh 5Ds

The first two arcs of it were actually in the top tier of the franchise imo.

Some motorcycle duels also feature in Arc V, which was less highly regarded

I get awful flashbacks of the YGO video games because some of them are excellent, like Tournament 2004 (Go, Dark Spellian!), but others have this weird elemental weakness and type matching thing and completely weird made up rules

How is this not talked bout more? Do they ever explain the reason for the motorcycles and are there other vehicles?

They developed a perpetual energy source called momentum that channels energy from duels, as well as emotions. The dueling sport was developed in a direction that could take advantage of that, and motorcycle style "D-Wheelers" happened to become the most popular. There are also duel vans and hover cars seen.
The manga notes the duels used to be done on horseback and such, and implies anything that can go fast enough would be acceptable.
