Quality and type of ingredients. I do think their white bread (which is very good) and bagels are overpriced though. Great bread though, if you go to Costco you can get 2 loaves for a just a bit more than the cost of one at a typical grocery store.

Ingredients in bread are generally a pretty small portion of the cost. You can spend a bit more on some specialty flours, but you're generally going to have to really try to get bread past the gold standard of ingredients making up ~30% of the price. Looking at their ingredient lists, I'm guessing the issue isn't so much the cost of the ingredients themselves as it is the lack of preservatives, which makes it much harder to produce in large quantities because it's less feasible to centralize production and ship it to multiple locations. That means you're either missing out on savings from larger-scale operations, spending more to ship it more quickly, or both, which drives up the price.
