In a pan, saute garlic, Vidalia onion, butter, salt and pepper. Peel and chop a sweet potato. Toss with onion mixture and roast at 400.

A little butter and salt. I like brown sugar too but don't go overboard. There are savory applications as well.

I put on some butter, then sprinkle brown sugar on it as well. It's really good like that.

another option instead of eating it whole:

Cut it into cubes/pieces (after skinning it, of course) and coat it in a mixture of butter or olive oil, brown sugar, and honey. Bake in the oven like that (forget the temp and how long, but there's tons of online recipes; it's something like 30-45 min on 350-375 degree heat, I think...).

Yeah roasting is good too.

The casseroles I make for Thanksgiving and Christmas are always a hit too
