I am trained though. I've been studying cooking since childhood. Not going to a formal institution doesn't mean I lack knowledge or experience.

Not lacking knowledge/experience doesn't mean you've trained as a chef. Most people cook and know how to cook to some degree. Culinary education is usually pretty important if you want to be a recognized chef. You can still get recognition and acclaim without the formal education, of course, but you'd have to have a lot of natural talent and cooking intuition. Again, not saying you lack knowledge or experience, or even that you're a bad cook, but if truly want to be recognized as a chef beyond empty compliments, a bit of culinary education can go a long way.

I've been to plenty of breweries and beer bars across the country that have trained chefs in the kitchen. Some of which have had Michelin stars. If your brewery is making really great beer you'd naturally want great food to go with it.

And again, I'm not saying Sunny's food is horrid and disgusting, I've never tried. I'm sure it's not bad by most standards. But, as I said, if you want to be recognized as an actual chef, a bit of training and knowledge could go a long way. And if anything, it will improve the quality and taste of your product.

To be fair, I wanna say one does not need to be some top-end chef of a three Michelin star restaurant to be proud of one's work.

I work as a civil engineer. At the time I started studying I was thinking of structures like skyscrapers, bridges, etc. 18 years later, I just analyze storage racks and shelving units for warehouses and retail stores. Projects I work on earns the company only a few thousands each but we do maybe 2,500+ such projects each year. Does my work seems like child's play compared to the multi-million dollar projects other engineers work on? Sure. But I still enjoy the work and the satisfaction of helping out our clients.

Everyone else that understands basically nothing about food service. Being able to handle a busy line and make delicious food are the criteria needed for a food service professional to call themselves "employed," not "chef." "Chef" is a job title more than an actual assessment of your abilities.

The "burger sauce" stuff that restaurants make and then everyone talks about how great it is. It's just mayo+stuff generally. What's a good initial thing for me to make at home, and then I can then adjust for myself later? I'll probably add a pinch of MSG in it, but, I'm not sure what else to add.

Praise doesn't count as credentials, unless perhaps that praise is coming from noted food critics and famous chefs. Similarly, if you were praised for your knowledge on a subject and called a professor, that wouldn't make you a professor (although you could rightly claim the meaningless title of "expert," which has no qualifications attached).

In the case of you being called a chef, that's a hyperbolic compliment. You don't have the credentials and almost certainly don't have the skills to be called a chef.

tbh, after watching Gordon Ramsay, I kinda got into that whole thing. And besides sounding cool, it has a very practical element.

The question is whether or not that pride is well-placed. And this is what really ties into his Gordon Ramsay remark. Ramsay has (or had?) a show called Hell's Kitchen. Almost every single kitchen he visited had people who thought they were doing good work, but the quality was generally pretty bad and the standards would have got them in trouble with the health department. While anybody can be "proud of one's work," that doesn't necessarily mean that one is doing great work. Even the place that was boiling and microwaving burgers on Hell's Kitchen had some people who complimented the food (whereas even many of the kitchen staff thought it was a terrible practice)

And praise in general often isn't legitimate. People are social animals, when in conversation they'll praise things more than they actually mean it (especially when put on the spot).

Regarding food, I have a high tolerance for bad food so unless something is really badly made (i.e. too much seasoning, burnt, uncooked, etc.) I probably will just say the food is good if asked by a waiter. Something can be a little dry and I will be fine with it.

In all my times of eating at a restaurant, only once did someone in my group questioned their dish. Someone at a table worked as a cook and said the mushrooms in his plate was not fresh. The actual cook/chef of the restaurant came to our table to assure the person the mushrooms are not canned mushrooms. Rest of us at the table just silently kept eating while looking away.

You're not going to find that kind of sauce at an actual burger restaurant. That's just fast food stuff.
