Toy Story 3 immediately after too.
I remember falling in love with Pixar all over again while those movies were coming out. All three just blew away my expectations. Still absolutely incredible and unique movies. I love how in Wall-E and Up specifically how they manage to tell stories with absolutely no dialogue for the first chunk of the film. In a kids movie! If you take out Cars... they had Toy Story 2 -> Monsters Inc -> Finding Nemo -> The Incredibles -> Ratatouille

To be honest, I'm more impressed by Monsters Inc, The Incredibles, Inside Out, Finding Nemo, Finding Dory and the Toy Story series than any of those films.
