Rare for steak, especially if I'm the one cooking it. Medium rare for burgers, or for steak at restaurants where I have no real expectation that the food is going to be good.

When cooking a steak at home, I aim for medium-rare.

I'm pretty picky, I don't really like rare (as in totally uncooked inside) but I often can't order med well because they don't understand that doesn't mean cook the heck out of it so there is no pink at all.

I prefer a decent amount of pink, but no deep red/blue at all either.

For practical purposes when ordering out, that means medium, because I'm ok with med-rare to med-well (as in still has pink inside and is juicy).

Well done is just a waste of a good steak in my opinion (or even a bad steak).

It also depends on the method i'm using to cook it as well though.

But, it was raw, just charred a bit on the outside, but completely uncooked inside at all. I tried eating it but it just wasn't cooked enough. All that steak, right there, and I couldn't eat any. That was seriously insane torture. It was the only meat as well, there were veggies etc, but just that for meat.

It's been well over 40 years, and I still remember that lol. I don't remember any of the schools I went to, the names of my last roomates from a year ago, my last phone number etc, but I remember that.

Most good cooks/chefs either let a steak come to room temperature before cooking or they sous vide them so they can cook until rare temp (130-135f) and hold it there, then flash grill it.

A cold center should never happen.

It was completely raw, even minorly cooked and I would have eaten soooo much of that, but yeah, I can't do raw meat.

Well I've never been to the fanciest of fancy restaurants, but my friend who worked as a grill cook told me that they are more likely to go under a bit because if a customer wants it done more than that, they can throw it back on the grill, but you can't uncook a steak once it's done
