My laptop has a 2080 Max-Q, which is probably not far off from whatever the next Xbox will have.

The thing is, all MS's titles are multiplatform now, making me wonder why I would even need the next Xbox.

Nope.

Unless you wanna take advantage of Game Pass - the selection on Xbox is much better than PC at the moment.

The selection on PC has been getting better. I got that "Ultimate Upgrade for $1" thing when they first announced it, and upgraded my normal Xbox GP to Ultimate.

It's really crazy to me how advanced mobile GPUs have gotten.

At this point, high-end laptop GPUs can play basically anything at max settings well above 60fps at 1080p, and most games relatively well at 4K.

It really makes me wonder if Nintendo may be onto something with this hybrid gaming platform idea. There will eventually come a point where the diminishing returns of dedicated console/PC hardware no longer translate into a tangible advantage over the convenience of portability.

thats all you can hope for. as the generations advance they shall stagnate since most laptops arent built to cater towards customization/upgrading in the same sense that a desktop is

That was true in the past, but the reality is that we've reached an era of diminishing returns in visual fidelity.
GPU performance has quadrupled since the PS4 and Xbox One have come out, and the best we have to show for it is half-assed attempts at raytracing.

Only reason I can think of is if you have a big digital Xbox library and those games are enhanced further than they are on Xbox One X.
