I don't get disconnected from videos or anything either. Would this be more likely a phone issue or router issue.

My only other thing I'm testing is my pc right now with Furmark and prime95 as I get frame stutter issues in league when I definitely should not on my specs. I run 144fps capped and it will drop to 70-10 and stutter.

Currently no issues during stress testing. And my roommate doesn't have these issues so it shouldn't be the internet (and ping is unaffected when the issue occurs)

Is your router old? It might be bumping your phone if there are too many devices connected, or the ip addresses lease is expiring too soon. Since you're mobile with your phone you could be hitting dead spots or interfering with the signal in some way, which would also make it more susceptible to interference from other sources too.
