I am playing Legion now and really enjoy it, but I guess it depends on what you're into in the game. I am pretty casual so there is lots of casual content to do. Questing in the Broken Shore, Mythic+ dungeons, there's a new raid coming out (although I just do LFR these days), etc. There's even a class mount for every class now.

Overall I'm having fun, I'll probably stay subbed for another month because I like to unwind with the game and enjoy the PvP. I'm on Tichondrius if you want to play sometime

Legion is much, much better than WoD. WoD was a content famine with pretty much nothing to do. Legion arguably has the opposite problem: there's too much to do. Some people take issue with the Artifact Power farming, but that's really only something you have to do if you're raiding top level mythic IMO. I just take AP as it comes and I'm fine with where I am.

The only real issue Legion has that I agree with is the legendary gear system and that's a relatively minor complaint.

do your class hall questline, then pvp / world quest / professions till like 825, then you can do LFR and LFR actually drops tier now. ilvl 890+ is basically the new endgame now if you want to PUG a raid or something, do mythic 5 mans (have not yet done one but thery look fun), more pvp, etc

i recently resubbed too and havent had too much free time to explore all the content, but there is a lot of stuff to do if you're the kind of guy that likes to just grab a drink and relax for the night grinding for shit. it's cathartic to me for some reason

Visit your order hall and talk to your artifact research NPC. They will allow you to instantly allow you to upgrade to Artifact Knowledge level 25 which is like a 24,000% increases Artifact Power gain.

Once you do that, begin the Broken Shore questline and you will quickly unlock Artifact Knowledge level 26 which is 100,000% increased Artifact Power gain.

You can also very easily attain iLvL 850 by doing Broken Shore world quests. They will award you, randomly, with "Dauntless Hood/Chest/Legs/etc" that all start at iLvL 850 with changes to warforge/titanforge up to 870.

-Start/pick up artifact research in your order hall to get the AK buff.
-Class campaign to get your third artifact relic slot if you haven't finished that.
-Broken Shore intro quests to unlock the building perks, WQs, Cathedral of Eternal Night, class hall campaign (gives you the class mount), a new follower, gear tokens for nethershards, and eventually unlock the new artifact traits when you have all of your traits.
-World quests are still good for gear and rep (the latter of which you need for flying).
-World bosses.
-If a Legion invasion is up, that gives pretty great gear too.
-Suramar quests for flying, unlocking the two mythic dungeons if you haven't already, and generally a shitload of AP.
-Run mythic dungeons until you get a bit of gear.
-Run mythic+ dungeons for gear.
-Run Nighthold for gear (though Tomb of Sargeras will be out shortly).
-Pick up the Balance of Power starter quest from your class hall. It'll send you to Aszuna to start with and is a long quest chain that unlocks an artifact appearance.

Since you said you like mounts, there are a few that are relatively easy to get.

The Riddler's Mind Worm is a flying, eel-like mount that requires you to find pages scattered across the world. Each page has a riddle that leads you to the next one. You can try solving it yourself, but a lot of the answers don't make a ton of sense even in retrospect:

Kosumoth the Hungering is an elite mob on the Eye of Azshara (the actual area in the world, not the dungeon). He'll only spawn for you if you click orbs that are scattered around the Broken Isles in order. The WQ that accompanies him will either drop a pet or an aquatic-only jellyfish mount. The reward will change each week.

The Return to Karazhan drops two mounts. One is simply a rare drop from Attumen the Horseman, the other requires you to speed-run the lower area's bosses to spawn a boss that will drop the mount.

Gul'dan drops a blacksmithing recipe that lets you craft a fel-green corehound mount.
