For what? Every game I have played in the past year or two still has an Easy mode. It may not always be called easy mode, cause they don't use the standard easy, normal, hard ratings, but still has it.

Megaman 2 came with "Normal" and "Difficult" modes. I compared the damages done by your collected weapons on the bosses in that game to the damage done to the bosses in MM1 and MM3. I discovered that "Normal" and "Difficult" in MM2 really meant "Easy" and "Normal", if we follow the standards of 1 and 3.

On the other hand, there are also games where there's a Normal, Hard and Super mode that are more like Very Hard, Stupid Hard and Don't Bother.

I liked easy mode honestly. Though normal mode is basically easy.

I always saw easy mode as being for the purpose of enjoying the story without worrying about dying a lot and starting over.
Hard mode is the opposite, ideally. You won't get much enjoyment from the story because of the constant dying, but the gameplay will be challenging and rewarding.
Normal mode is a nice balance between the two.

Again, this is all ideal.

I just hate how games are designed around a default difficulty mode that's way too easy and if you want something that isn't just a hallway simulator the next mode up is clunky and artificial as a result.

Max Payne did it right years ago. Regular difficulty is dynamic. Breezing through the game? Less health packs, more enemies/accurate enemies. Having a hard time? More health packs more ammo, less enemies etc.

Never died too much or went through the game without a challenge.

Its almost like watching a movie. No challenge at all. Some people like their games super duper easy though where they automatically win. Lame.

IIRC there was a problem with the PC version of Max Payne 2 where the difficulty did scale up if you were doing well but it wouldn't scale down if you started having problems, so if you breezed through the first few levels and suddenly started to struggle halfway through you were boned

A lot of these people (not all) throw sixty bucks at these games and move onto something worse and don't even experience the full game.

I think the true criminal, though, is a game without difficulty options. That annoys me to no end.
