I've always been a fan of Mages. Death Knight is also fun. I haven't played in a while though so I'm not sure what state those classes are in

Mages (great rotations, feel very active), DK (Unholy is my favorite spec in WoW), or Rogue (Outlaw is a fun spec)

If you can manage the heal-by-damaging playstyle, I'd roll a disc priest.

For tanks, paladin, warrior, or DH. DK tanks now need WAY too much haste to be viable with the complete lack of rune regeneration mechanics outside of haste.
