Because it's easier than making up your own calendar.

Just like how it's easier to make everyone speak English instead of making up your own language.

Squall, and especially some other characters, look particularly caucasian.

It's not like all the hawaiian FFX CG characters.

Rinoa on the other hand is unequivocally Asian.

Square said FFVIII's world was designed to have a more European feel, particularly early post-WW2 Europe. The Sorceress War is FFVIII's version of WW2.
