Most of what I can remember is consoles that, while not terrible, were more or less average for the first few months, and generally taking around 8 months to a year to get out their first "killer app".

I also remember reading some game magazine that talked about how you could see "the individual blades of grass" in Tekken Tag Tournament for PS2 and that seemed quite impressive to me.

Bahahahaha
Although for all I hate on the idea of competitive Tekken, as a casual game it's a blast

I've never played a Tekken game, just the idea and screenshots were quite impressive to my brain at the time.
Jak and Daxter was my first PS2 game and man it was something. I thought it looked amazing and the complete lack of load times was impressive. First 10 minutes of playing that game I was smiling throughout.

Shame the sequels kind of ruined it :/
But yes, Jak and Daxter was an amazing game. It was also one of the only games I got 100% complete!

J&D1 is fine, but it doesn't do much to distinguish itself from your average 3-D platformer other than Daxter being awesome, and he's in the next two games anyway.

Jak II and 3 didn't do much to distinguish itself from "argh I speak in a gruff voice I'm mad let's ruin a good platformer with sloppy gta elements"
Also, unless a price drop is coming within the next year or so, I don't mind getting a console day 1. After all, if it's gonna be worth it eventually, it doesn't really matter when you buy it!

What other games do this?
I'm having a hard time thinking of any!

They're all too expensive, for starters. But there have been some I've considered eventual must haves, right at launch. Most notably the greatest console ever. The PS2.
Super Mario World (and F-Zero & Gradius III if you're into that) at launch, with Super Castlevania IV before the end of the year, that's a pretty good start.
Probably the N64 when it first came out. There was so much hype surrounding it. I remember how huge Mario 64 was for my friends. Looking back, yeah, that launch kind of sucked. SM64 really is an incredible game though.
Right now, the Vita is really enticing (but this has a lot to do with Skype more than anything). I still probably won't buy it until later.

Don't forget Pilotwings, Super R-Type, Final Fight, Super Ghouls 'n' Ghosts, Actraiser, and Final Fantasy 2!
SNES had a kickass first 5 months.

Ah yeah I forgot about some of those being '91 games and not '92.
Honestly the SNES did pretty well every year of its life cycle. It's weakest year was probably 1993 and that year still saw games like SF2 Turbo, Mega Man X, Mario All-Stars and friggin' STAR FOX. They only really messed up with Mortal Kombat, but man did that cost them. And I guess a collection of NES remakes being your only big first-party holiday title didn't help a ton, but as remakes go Mario All-Stars is one of the best. And it's not like Sega was bringing the first-party guns, their big game was Sonic Spinball.
