Only ever played Smash, and Brawl was my first foray into some "professional" playing. I did ok for a beginner, and I think I have a future if the online existed. Too boring to play otherwise so I was get into one of these new-fangled games.
Watched some of EVO and here's what I think of these games just by watching. Obviously there's only so much info I can glean from them.
Super Street Fighter IV Arcade Edition Looked the most fun, I've played SFII back in the day so I'm relatively familiar with this too. Matches took a good amount of time and I liked the style.
Tekken 6 Also played some of Tekken, though I remember it being more....flashy? I swear I did things like grabs and some more complex combos, these guys just kinda...spaced and threw punches. Never liked the air juggling either. But I have to say watching this against the others really made me appreciate 3D fighters.
Blazblue Don't know what version this way, but it looked cool. Looks a little slow though, and I kinda don't like how it seems like they just got into huge air juggling combos to do most of the damage.
Mortal Kombat For some reason this reminded me the most of Smash. So I guess I liked it, but I'm also a little turned off by how unpolished it looks comparatively to the rest. The breakers looked cheap.
Marvel vs. Capcom 3 Yeesh. Never liked the 3v3 stuff, and it just looks so hectic. Not to mention I hate the idea of a forced comeback mechanic, and the way it seems like everyone loses their health in one quick combo, unlike the long ones of Blazblue that look at least difficult to pull off. Party game.
Soul Calibur V I was a beast at II so maybe I should just wait for this to come out.
Blazblue is awesome (granted a little meh at it now that they changed Hazama and haven't mastered his new consoles + dashing sucks using the analog stick on 360 controller)
BB also has a pretty cool story and AWESOME joke endings
plus Hazama Bang and Hakumen are awesome

I've heard a bunch of top players say that the meter management of MK is the best part of it on streams/podcasts/etc. Breakers included in there of course.
I was easily the best smash player in my whole school back in high school, but once Brawl came out and I started facing some board 8ers here I learned I was only mid-tier at best, usually low tier.

yeah this is pretty true
all you need in order to have an advantage over the majority of players who aren't competitive is knowledge of what each of your moves are and what each of your opponents' moves are

Pfft. Hazama is way better now that he has more than one combo.
And let's see... can't help on Tekken or SC, since I never really cared for them. MK9 is pretty fun and it has a solid engine, but it's not my cup of tea, so I guess I can talk about the other ones.
BB is finally good in CS2. The good news is, you can probably find CS pretty cheap now and the update patch is free (I think). You'll still need to pay for the 3 DLC characters if you want them, and that runs you about... $20? $15? Not sure how they're priced.
BB is, I think, harder to just pick up and play at a casual level than the Capcom fighters. People exaggerate when they say you need to know 30+ combos to be good, but it still ain't easy.
SSF4AE you can get for $40 and it's pretty good. It's a little slower than the other games in terms of how it plays, but rounds go by a lot faster than BB. You have a lot of character diversity (even if the game is kind of unbalanced right now), but a free balancing patch is on the way.
AE is probably the easiest of the games to pick up and play on a casual level, but you might find that how link-reliant some characters are can be worse than the long combos of BB.
Marvel... I'd say just wait for UMvC3. Game can be fun now, but it'll be obsolete in a few months. Probably either a little harder or easier to play than BB on a casual level.
My verdict: Be a cool dude and pick up KoF13 in October.

Honestly, MvC3 is actually the easiest to play and learn
However, SF4 is good to pick up and play and prolly the best place to start. Goes well at teaching all the general stuff about fighters......except the links. This....prolly has the most bullcrap link system ive ever played, but other than that, the game is great all around.

What if I don't need a game to "learn" how to play fighters? The reason I didn't like MvC3 for being hectic is just because of style, not really in difficulty. I'm just looking for what people consider to be the best and most relevant, and probably long lasting.
Yeah I'll probably get SF4 at this rate. Blazblue seems cheap so I might pick that up too.
I guess I should get back into Brawl, but as Toon Link it was pretty hard to keep up. Played Melee again recently and I think I'm just suited better to a faster game.
if your looking for faster games, sf4 and marvel wouldnt suit you too well, as theyre both rather slow. sf4 is really slow overall with like...short bursts of timing intensive technicality (lots of frame specific links) but its still really slow, brawls honestly faster than it. marvel, heavily character dependent but among the top tiers the only one that you'll really need to practice any technical things with would be mags.
melees much faster than all 3 of those games at any rate, if your looking for fast games you'll want mvc2 or guilty gear but neither of those are very popular. the fastest game with the biggest scene would be melee atm unless mvc2s scene is still alive but I was under all impressions it was pretty much on its last legs
