Ten years ago, conservatives were throwing a fit over Michelle Obama trampling over their freedom of choice and promoting healthy lifestyles and bodies.

Now it's conservatives that are saying shit like "omg, where did all the fat people come from??? Btw everything you know about food is wrong here is how you should eat and why your doctor is lying to you".

is it because they realized that a lot of poor people are fat?

Probably around the same time the lunatic fringe of the Left decided that any time someone dares to mention someone's weight or suggest that being massively obese is generally unhealthy that it's fat shaming/body shaming/etc and is thus unacceptable prejudice. WOMG triggered.

Pretty much this, in less polarizing terms. Vocal conservatives tend to get off on "owning the libs" in lieu of developing a personality of their own, and these days, "the libs" tend to object to fat shaming. Therefore, vocal conservatives like fat shaming.

Because conservatives are largely reactionary (they've always been to a point, but it's gotten out of hand) these days, and formulate their positions based off of opposing what they think their political opponents support.

They also like blaming people for their own health problems in order to justify for-profit health care wherever they can, and view addiction and obesity as easy avenues by which to do that. If you can blame someone for their own hardship, you can justify not doing anything to help them (which is incredibly funny coming from people who claim to be Christians).
