Which is best?

Eliminated Day 1: Rey/Finn vs Kylo Ren
Eliminated Day 2: Luke vs Kylo Ren
Eliminated Day 3: Rey vs Kylo Ren III
Eliminated Day 4: Anakin/Obi-Wan vs Dooku I
Eliminated Day 5: Palpatine vs Windu/Fisto/Kolar/Tiin

Holy is there a lot to unpack in this one. Firstly Palpatine being so strong and fast that he instantly kills two Jedi Masters and members of the high council. He then dispatches Kit Fisto seconds later which is amazing if you dive into Kit Fisto in Star Wars lore. Anyway there is a ton of fantastic meme material in this fight. I am the senate and Unlimited Power are both excellent. I am one who thinks Palpatine let himself lose to Windu because he knew Anakin was coming and what would happen. It is shown many times in the saga that while the Jedi fear looking into the future, Palps was more than willing to take that chance. It pretty much explains why he always one ups everyone forever. The other people with that power all don't use it. And yeah the future is always changing but Palps takes that bet. Pays off for him pretty much constantly. Alternatively Mace Windu is the best duelist in the universe and legit beat him.

While the purpose was to show how strong Palpentine was, it doesn't really achieve that in the movie, it just makes Kolar and Tiin look insanely bad and Fisto a bit too, though not quite as much.

Mace Windu definitely wins that duel fair and square. I am not of the opinion that he's stronger and that's an important distinction, but he won that one.

He invented and mastered a lightsaber technique that (I can't remember the name or the exact in-universe explanation) that basically allows him to keep the fight at a stalemate forever since it uses the dark side force. Windu doesn't himself use it, not directly, but having mastered it means that the stronger the dark side force user he's having the stronger he is with that technique himself and it's supposed to be the reason he isn't just cut down in seconds. This is elaborated much more in the novalization. Also makes Fisto surviving for as long as he does all the more impressive because he doesn't use that. The stalemate breaks when they shatter the window and Windu is lucky enough to not be the one standing the window sill, because the force Palpentine had to use to stand firmly there allows Windu to break the stalemate and disarm him. Palpentine obviously puts on a show after this to lure Anakin and he's not as powerless as he appears to be, but he tried to deal with Windu before that point and failed due to Windu's techniques and a bit of luck on Windu's side, getting his lightsaber destroyed in the progress.

It's called Vaapad and the premise is that he's basically constantly teetering on the precipice of the light and dark side and is just supremely more focused as a result of the mindset it takes to maintain that balance, and they are a better fighter because of it while still not succumbing to the dark side. It's just a very ferocious technique that you'd expect to be used by dark side users.

Something i didn't knwo reading the wiki, it sounds like Windu during the fight with sidious was so immersed in the style that he basically went Ultra Instinct from dragonball super, his body moved on its own without his mind directing it. And it does mention about how someone who masters this style can use the darkness of the opponent against them.

Also apparently it had a predecessor form called Juyo that was the same concept of extremely ferocious fighting

Who stuffing the last option
I voted for it

As far as being an actual good fight scene goes, it's easily the best in the series
