They did add the lesbian scene with Constantine - that was not in the original. That scene worked fine, but not as visually cool as the comic. And yeah, I know that John Constantine is famously bi-sexual in the comics, but not in that particular issue of Sandman.

Bisexual people don't stop being bisexual. They're just bisexual.

Also, some (i.e. quite a lot) people do not commonly show stereotypical and/or noticeable behaviour when it comes to sexuality. So yeah, sometimes there can be an issue or episode with a bisexual person not showing any 'bisexual behaviour', but that doesn't mean they're like taking a break from being bisexual.
