I haven't fried plantains ever and I'm glad I got some at the store

My exes mom used to fry these up for me for breakfast and it was delicious

I could never get into them because of how sweet they were (maybe I should try out other people's versions).

The less ripe when you fry them the less sweet

I've always liked sweet plantains going back to when I was a kid. In fact, I had some earlier today as a part of my lunch.

Yeah, you gotta go for the savory plantains.

I know this is AI, but I just wanted to point out what people call plantains there are distinctions in spanish.

Amarillos (yellows in spanish) are fried plantains made from the sweet yellow (ripe) to spotted (super ripe) plantains. These get fried and come out soft and toasted.

Tostones (toasteds in spanish) are ALSO fried plantains made from the green unripe plantains. These get fried twice and depending on how you do them can even come out like potato chips. But they do come out crunchy for sure.

So you probably want to go for tostones rather than amarillos. I hate amarillos.

Not that I'm complaining, but one day I realized how bizarre it is that amarillos are considered part of dinner, on the plate with everything else when it's basically pie filling.
