i chopped up a summer sausage and mixed it with some browned onions and garlic and tossed that in too. also a can of pork n beans

I dont do the 16 day thing like your doing but you are using some ingredients I use. Theres a tex mex cookbook I have that uses peppers, beef chuck, kidney beans light and dark, pork and beans, cumin, and chili powder. I normally just use hamburger but shedded beef should work. I'd use a pressure cooker on the beef then put it all together. Then slow cook it. 8 hrs later done

My go-to chili recipe uses chorizo and chicken thighs for the meat, poblano & red bell peppers, and kidney beans. It is supposed to only take 45 minutes to cook but I usually let it go for 5-6 hours.

I love chili and don't take issue with what you are doing at all. I'd tear into it. With that said I'm kind of a weird person in that I got used to as a kid only eating chili in the fall after it cooled off and in the winter when it was cold. Typically I might do it once more in the later winter/early spring but about April I cut it off for the year and will not touch it again until fall rolls around and it cools off.

So it becomes a seasonal thing for me where I really look forward to it and crave it for like 6 months and I sooooooooo look forward to cool weather in the fall when I can make that first pot of chili. It is why I was so irritated last year because it was such a long extended summer that instead of cooling off in late September like when I was younger it just kept staying warm out.

I thought to myself surely in October it will cool off as usually by the end of October for Halloween it is like 30 degrees and sometimes even has snow. Fuck no it stayed hot all the way through October and even the first week of November was still 80 fucking degrees and I refuse to make chili when it is 80 degrees. It needs to drop down to like the 50's and stay that way.

Finally about mid November it cooled off enough to make chili. I felt like my chili season started like 2 months later. But anyway this sounds great but by May I have already cut off chili for the year so this would be a mental hurdle for me to eat this time of year. Sounds great though.
